Rogan Josh Recipe Hot Food in India


Beautiful color Kashmiri Rogan Josh comes from dried red chillies used to prepare it. When you read the recipe, it might seem like you'll end up with a dish of fiery but never fear, this chili has a 'skin more than bite'! There are versions and versions of Rogan Josh and this one is mine, tried and tested several times to great success. Enjoy!


Ingredients:

* 1 kg diced lamb
* 1 / 2 cup yogurt
* 2 bay leaves
* 8-10 cloves
* 1 teaspoon pepper
* 2sepotong cinnamon
* 5-6 cardamom pods
* 2 tsps coriander powder
* 1 tsp cumin powder
* 1 / 4 tsp turmeric powder
* 2 tsps garam masala
* 3-4 Kashmiri dry red chillies coarsely ground
* 2 tbsps garlic paste
* 2 tbsps ginger paste
* 4 tbsps vegetable / canola oil / sunflower
* 2 medium onions finely chopped
* 2 cups beef / lamb stock
* 1 cup water
* Salt to taste
5 tsps of single cream
* Coriander leaves for garnish

Preparation:

1. In a bowl, mix the yogurt and sheep and keep aside. This will tenderise the lamb.
2. Heat oil in a deep pan and add the whole spices (cinnamon, cardamom, cloves, bay leaves, peppercorns). Fry until they turn a little darker in color.
3. Now add the onions and fry till they turn golden.
4. Add the ginger and garlic paste and saute for one minute.
5. Add the powdered spices (coriander, cumin, turmeric, garam masala and Kashmiri winter) and fry till the oil separates from the masala.
6.Add meat and yogurt mixture into the cuisine and fry well.
7. Add the beef stock, water and salt to taste. Cook until sauce is reduced. Stir often. Sauce should be thick when done.
8. Beat the cream until smooth and stir into the curry to mix well.
9. Garnish with coriander leaves and serve with plain rice or Pulao and vegetable side dish.
